Molasses Cookies

When I get to choose which cookies to make, it will always be this one. These cookies are big, soft, chewy, and delicious. These cookies are huge and so beautiful. I like to use sanding sugar to roll them in prior to baking, but regular sugar works just fine, too.

1/2 cup butter

1 cup sugar, plus 1/4 cup for rolling

1/4 cup molasses

1 egg

2 cups all-purpose flour

2 tsp baking soda

pinch of salt

1/2 tsp ground cinnamon

1/2 tsp ground cloves

2 1/2 tsp ground ginger

Directions:

Preheat oven to 300 degrees. Line 2 baking sheets with parchment paper.

In a medium bowl, cream the butter with 1 cup of sugar. Add the molasses and egg and beat well.

In a small bowl, stir together the flour, baking soda, salt, cinnamon, cloves and ginger. Add the flour mixture to the creamed mixture and stir to combine well.

Using a 1/4 cup measure or scoop, shape dough into 12 balls. Roll in remaining 1/4 cup sugar and place 6 balls on each cookie sheet. Bake, one sheet at a time, for 20 minutes or until cookies are beginning to brown. Cookies should look slightly underbaked. Remove to a wire rack to cool
